Hi everyone, it’s Judy. Joy is off and running with her kids, preparing for college and high school all at the same time. We decided to take a few days off, which gives me a chance to have a little get together with my friends and plan a perfect evening chock full of gossip, scrumptious food and cocktails.
My favorite Blueberry Lemonade (twicebakedtwins.com/blog.php/blueberry-lemonade) with chilled vodka and a splash of blackberry liqueur will be the shining star.
It is a beautiful summer night. The table is set, candles are lit and I am starving. I decide on a variety of small tastings for everyone to sample. Joy told me to call them tapas, canapes or amuse bouche. What? When did they stop calling them appetizers?
They can be stacked, stuffed and skewered or wrapped, rolled and filled. They can be spicy, salty or sweet. They are little two-bite wonders, which are very unique and flavorful like Bloody Mary Shrimp Shooters or Root Beer Soaked Pork Sliders. These sound delish!
The recipe Joy gave me is amazing. It’s crunchy and creamy and goes down so great with an ice cold anything. Enjoy!
1 cup ricotta
1 tablespoon honey
1 teaspoon cracked black pepper
slices of your favorite fruit
french bread slices, toasted
crispy proscuitto for garnish (recipe follows)
Combine the ricotta with the honey and pepper and a pinch of salt. Taste it and adjust the seasonings. If you like more honey add more.
Preheat the oven to 350º F. Arrange the baguette slices on a baking sheet and brush lightly with olive oil. Put in the oven and cook until lightly toasted, about 10 minutes. Remove bread slices from the oven. Arrange on a serving platter and top each with a dollop of fresh ricotta, peach slices and sprinkle with crispy proscuitto.
Heat oven to350º F. On a cookie sheet lined with parchment paper, lay procuitto as if it were just like bacon. Bake for 12 to 14 minutes or until completely crispy. Crumble and sprinkle on crostini.
