Vanilla-Roasted Peach Ice CreamAs Joy and I try to survive the summer with her kids (they are driving me crazy too!!), we try to sneak in a little work. The girls always have to be dropped off somewhere, picked up, then out again.... It is just ridiculous.
Anyway, we try to get away early in the morning while they are still sleeping, which gives us enough time to visit the local farmers’ markets. We love to see what fruits and vegetables have been harvested this week and each one inspires us with an idea for a new recipe!
As we pull up to one of the markets, the aroma of fresh-baked bread hits us right where it hurts! Our stomachs! We are starving. But then again, we are always starving. Why is that? That big “cuppa” coffee we started off with was not enough to stop us from tasting everything in sight, from fresh fruit and cheeses to lovely home baked goodies and the local honey.
Another farmer has baskets and baskets of sweet juicy peaches and the aroma is totally amazeballs! Joy’s head is spinning and her eyes start moving very fast (actually, it’s a little scary) thinking about what she is going to do with these juicy peaches and starts filling up her basket before anyone else can.
The days have been extremely hot and there are many more ahead of us so le’ts try stay cool and enjoy them with this scrumptious ice cream. Enjoy!

Vanilla-Roasted Peach Ice Cream
2 peaches: remove pit, cut in half
1/4 cup vanilla sugar
2 tablespoons brown sugar
a big sprinkle of brandy, scant 1/4 cup
2 cups prepared vanilla ice cream
Place peaches on a parchment lined cookie sheet. Sprinkle with the sugars and the brandy and roast (350°F) for 55-60 minutes, or until soft. When cool, cut some of the pieces into smaller chunks and smash some others for a great texture.
Fold into a good quality vanilla ice cream, YUM! Serve with our favorite pound cake and fresh whipped cream!
