Happy Thanksgiving! We can’t wait until we are all together again, sitting around the family table and doing our favorite thing ... eating!
We have already started to prepare for the holiday, but first it is time for the sisters to gather around Mom’s table, with paper and pencils in hand, waiting for Mom to go over the “who does what list.”
We will be making all the traditional sides; fluffy mashed potatoes with fresh chives and butter; creamy sweet potato casserole crusted with brown sugar, baby marshmallows and pecans; and that boring green bean bake the kids keep asking for. And, don’t forget the cranberry sauce - the ruby red berries glistening, just like little holiday gems.
Even though we will open a can of cranberry sauce for the boys in the family, we have decided to do a luxurious version of the traditional sauce, but it is very easy and quick.
12 oz. pkg. of fresh cranberries
1/2 cup Ruby port
1/2 cup vanilla sugar*
zest of one orange
splash of orange juice
pinch of salt
1 cinnamon stick
Garnish with roasted pecans, orange and lemon zest.
Place all of the ingredients into a saucepan, except the garnish, and simmer for about 20 minutes until the sauce is jam-like. Taste the sauce, if it is too tart, add more sugar, or too sweet, add more citrus, You can’t ruin it. Top with the pecan and zests. Store the extra cranberry sauce in the refrigerator for up to two weeks.
* To make vanilla sugar: Split one vanilla bean and add to two cups of sugar. Let the flavors blend for at least for a few days before using.
