The holidays are here and the company’s coming! We have to decorate the house, clean it, do the shopping, then wrap the gifts, plan the holiday menu, and grocery shop.
Are we having fun yet? When does the fun begin? When we start making the cookies of course! What would this holiday be without all the cookies! Gingerbread men, jammy thumbprints, and glistening tree-shaped cookies and stars, we love it all!
Each and every family has their own favorite cookie recipe and traditions for preparing these mouthwatering treats. All month long we will be sharing our family favorites for you to enjoy. So, put on a big pot of coffee and grab a cookie ... the holidays are here ... let’s eat!
Visit us @TwiceBakedTwins.com to share your favorite cookie recipe and enter our Holiday Cookie Contest. The contest ends on Dec. 15. The winner will be notified by email and will receive a $100 American Express gift card!
Chocolate Cookie Base
1/2 cup butter, softened
1 cup sugar
1 egg
2 teaspoons vanilla
1 1/2 cups all purpose flour
1/2 cup unsweetened cocoa powder
1/4 teaspoon baking soda
Preheat oven 350 degrees. Cream butter and sugar in mixing bowl on medium speed until light and fluffy. Beat in egg and vanilla. In a separate bowl add flour, cocoa powder, baking powder and baking soda; sift to blend perfectly. Now add to the butter mixture and combine. Chill dough for at least one hour. Shape dough into two-inch balls, place on ungreased cookie sheet and bake for 10 minutes.
3 oz. package cream cheese
1/4 cup marshmallow fluff
1 cup sifted confectioners sugar
2 tablespoons flour
1 teaspoon vanilla
1/2 cup chopped walnuts
1/2 cup flaked coconut
Soften the cream cheese and mix with the fluff. Blend in the confectioners sugar, flour and vanilla; cream well. Stir in nuts and coconut.
1/2 cup semi-sweet chocolate chips
2 tablespoons butter or oleo (this is what Nana called Crisco in those days)
2 tablespoons water
Melt chips and butter over low heat in a small saucepan. Add the confectioners sugar, whip quickly until blended.
To assemble cookie: place about a tablespoon of ice cream mixture onto each chocolate cookie base. Drizzle with chocolate mixture and top with roasted nuts and a cherry!
