The first thing I hear from my children every day is, “Mom, what’s for dinner?”
The second thing is “well, what are we having with it?” Does this happen to you? I am still on my second cup of coffee when the dreaded phone call comes in at 8 a.m. and I’m thinking breakfast, not dinner ... yet.
How about a grilled avocado? The grilling brings out the smoky flavor and that velvety texture. The halves can be used to fill with any salad; chicken or shrimp, even a fruit salad. Or just use your grilled half to spread on some crusty bread.
The summer favorite, guacamole can be prepared by grilling the avocado as well ... now that screams flavor to us.
Since it is a weeknight, we’ll keep it simple. You can be as creative as you like, or just a simple dollop of sour cream and a splash of lime juice works fine for us tired moms. Enjoy.

2 avocados, cut in half
2 tablespoons fresh lime or lemon juice
1 1/2 tablespoons olive oil
salt and pepper to taste
Cut avocado in half, remove pit. Drizzle with fresh lime or lemon juice and brush lightly with olive oil.
Gently place avocado on hot grill until grill marks appear, three to four minutes. Season with salt and pepper and a splash of fresh lime juice.
